2 delicious recipes with chia and quinoa

Quinoa with salmon in papillote

The recipe that we propose is a wonderful option to enjoy all the flavor of salmon, this time prepared in a different way, since we opted for the papillote as a way of cooking. Do you dare to prepare it ?.

Ingredients for cooking quinoa:

  • A cup of quinoa.
  • 2 cups of water.
  • A pinch of coarse salt.
  • A splash of extra virgin olive oil.
  • Two garlic cloves without skin and small pieces.

Ingredients for salmon papillote:

  • A piece of fresh salmon per person.
  • Salt.
  • Ground black pepper.
  • A square piece of aluminum foil to line and cook each piece of salmon.

Elaboration of the quinoa:

In a pot we put the water with a little salt on the fire until it begins to boil. When it starts to boil add the cup of quinoa. Reduce the heat to the minimum and cook for 12 or 15 minutes, or as long as you indicate in the quinoa package.

Turn off the heat, cover the cauldron and let the quinoa stand for 10 minutes. Uncover the cauldron and with the help of two forks we remove the quinoa so that the grain is released.

In a frying pan we put a little dish of virgin olive oil to heat to brown the garlic cloves that we have previously peeled and chopped. When the oil is hot, brown the garlic cloves a little bit.

Pour the dorado garlic on the quinoa and stir to mix well. We will reserve the quinoa to accompany the salmon.

Preparation of salmon in papillote:

We are peppering each of the pieces of salmon. On each square of aluminum foil we put a salmon fillet.

We closed the steaks well everywhere. We put a frying pan to the fire and with high fire we cook each filet of salmon during 5 minutes by each side.

We will be careful not to open the aluminum foil so that the steam does not escape and retain all the flavor. Once we have prepared them, we arrange them in individual dishes and serve them accompanied by quinoa.

Chia seeds and tofu burgers

The tofu It is also known as Tofu, and it is obtained by curdling the soy milk. The burgers that we present here are very easy to make and we will prepare them with ground tofu, chia seeds, carrots and some spices.

Ingredients:

  • 500 grams of tofu.
  • A teaspoon of chia seeds.
  • Two carrots cooked and pureed.
  • Some sprigs of minced parsley.
  • A pinch of salt.
  • A pinch of ground black pepper.
  • A pinch of ground cumin.
  • Bread crumbs.
  • Extra virgin olive oil

Elaboration:

We crush the tofu well. Mix the crushed tofu with the carrot puree in a bowl. Next we add the chia seeds, the minced parsley, the rest of the spices, a pinch of salt, a little breadcrumbs to bind the dough and mix everything well.

Let the dough rest in the refrigerator for about 30 minutes. Then we take dough balls and crush them to shape the burgers.

Once we have all formed we go through bread crumbs. In a frying pan we put a little dish of virgin olive oil to heat to brown the burgers on both sides. Once we have all golden brown we put them in a dish or plate to take them to the table.

When serving them we can accompany them with a little bit of soy sauce on top.
