Ingredients for 6 people:

  • A large sheet of puff pastry.
  • 150 grams of icing sugar
  • 150 grams of ground almonds.
  • A tablespoon of water.
  • A beaten yolk to brush the puff pastry.

How to make puff pastry and marzipan cakes:

  1. If the puff pastry is frozen, let it thaw at room temperature.
  2. To prepare the marzipan we will put in a bowl the ground almonds, the sugar, the spoonful of water and beat with the blender arm until forming a mixture. We remove the mixture from the bowl and knead a little.
  3. We make a ball with the dough, wrap it with plastic or film and store it in the fridge for 60 minutes.
  4. After the time we extract the marzipan from the fridge, we extend it and we split in 6 portions.
  5. We put the puff pastry on the table or countertop and cut 12 equal portions. We will reserve 6 portions that will be used to close the cupcakes. We take 6 pieces of puff pastry and we prick them a little with the help of a fork.
  6. We put some marzipan over it without reaching the edges.
  7. Then put the other portion of puff pastry on top and close the edges by pressing with a fork so that it is well sealed without getting to pierce the puff pastry.
  8. We beat the yolk of an egg and with the help of a brush we paint the puff pastry.
  9. We preheat the oven with a temperature of 180ºC for 10 minutes.
  10. Then place the puff pastry cakes on the oven tray and cook for 25 or 30 minutes, until golden brown.
  11. Carefully remove the tray from the oven and let the pastries cool. When they are cold we arrange the cakes on a tray and serve them.

  • 75 grams of well-ground almonds.
  • 75 grams of whole almonds without skin, filleted and toasted.
  • 225 grams of simple sifted wheat flour.
  • 225 grams of white sugar.
  • 35 grams of icing sugar.
  • 5 eggs

Preparation of soft almond cake:

  1. To prepare the cake we need a mold of what are called demoldables, we can separate the two parts.
  2. We preheat the oven with a temperature of 180ºC for 10 minutes.
  3. We cut the piece of butter into four pieces.
  4. We take a piece we put it in a saucepan to the fire and we melt it to later to spread the mold.
  5. Once we spread it with the butter, we also spread a little flour.
  6. In a bowl put the eggs with the white sugar and beat well until they whiten a little.
  7. We add to the beaten eggs two pieces of ointment butter and the sifted flour.
  8. We also add the ground almonds and stir until they form a mixture.
  9. Then pour the mixture into the mold and introduce it into the oven.
  10. Cook the cake about 20 or 25 minutes, the cake should be cooked but soft texture.
  11. Carefully remove the mold from the oven and unmold it. We booked the sponge cake while toasting the sliced ​​almonds a bit.

Ingredients for 6 people:

  • A defrosted puff pastry.
  • 130 grams of sweet angel hair.
  • A beaten egg yolk to brush the puff pastry.
  • Sugar glas to decorate the braids.

Preparation of angel hair braid:

  1. We begin by thawing the puff pastry at room temperature.
  2. We are putting the oven to preheat with a temperature of 180ºC for 15 minutes.
  3. We extend the puff pastry on the countertop and mark a little, with the tip of the knife, being careful not to cut, just mark along 3 equal parts. We do not touch the central part.
  4. We will cut the sides or ends diagonally towards the center.
  5. We cut the two equal ends diagonally towards the center to later be able to form and knot the braid. In the center of the puff pastry we put the angel hair and spread it out well.
  6. Then we take the dough strips one on each side and join them to form the braid.
  7. Once we have formed it we brush with the beaten yolk and a brush the puff pastry. Sprinkle the icing sugar over the braid.
  8. We introduce the braid in the oven and cook at a temperature of 180ºC for half an hour, until golden brown.
  9. We extract the puff pastry from the oven and let it cool.
  10. Once cool, place the puff pastry braid on a nice tray to present it on the table.
