We are facing a classic and traditional dessert very popular in the United States, where they are known as Pancakes. Basically, however, although in our country they are known by the name of American pancakes It will surely surprise you to discover that its origin is Russian, not American.
Basically they consist of a kind of round bread generally sweet, which is made with flour, eggs, butter and yeast to make them much more spongy. And they differ from the traditional crepes not only in the use of yeast, but in that the mass of the crepes are left to rest for a few minutes in the refrigerator before cooking.
Basic recipe of American pancakes
As you will see, this recipe is very simple to make and for its mild flavor it is ideal to accompany different types of food. Take note of the ingredients (with these amounts about 16 pancakes) and their preparation.
First of all we will need 4 eggs, to which we will have to separate the yolks from their egg whites. This step is very important, and you have to do it with some patience (we recommend separating the egg white, passing it to another container, then doing the second one and passing it along with the first one, and so, in that way if a egg is broken or mixed part of the yolk will not waste all the previous ones!). Once this is done, we reserve for a moment.
We look for a big bowl and in it we have to sift common flour (200 grams), sugar (3 tablespoons) and a pinch of salt. Once the dry ingredients are sieved, we make a hole in the center - we will be in the form of a crown - and pour the 4 egg yolks that we separate, milk (250 ml) and 250 ml of butter or melted margarine. You can already at this time go to heat the frying pan to moderate fire (remember that it should not be too hot or we can burn a little pancakes).
The next step is to mix everything until a homogeneous and dense mass is obtained (if it is too loose, add a little sieved flour until it is well). Then we will beat to snow point the 4 clear ones that we had separated and we added it to the mixture, stirring very softly so that both preparations are integrated, without rushing it or you will lose the spongy consistency typical of the American pancakes.
With the dough already ready, we brush the hot pan with some margarine. With a ladle we pour the preparation, we wait only between 1 to 2 minutes and we will see that the lower part has been browned, then we turn helping with a spatula and wait a minute more to remove. Before each new pancake do not forget to brush the pan with butter again.
Make your pancakes more delicious with butter, honey or jam
In addition to having used butter in the preparation of American pancakes (in its composition, to be more precise), it is also common cut two or three squares of butter and place them on top of the pancakes, which due to the heat tend to melt and become much softer.
If you already have your American pancakes, delicious and steaming, you can put a little cold butter on top or give them that added touch that will raise their flavor even more. In this sense, a classic and infallible option is the honey.
