In preparing all these recipes, it will take you about 20 minutes to prepare them, and about 30 minutes to cook them.

Ingredients:

  • 3 medium and mature aubergines.
  • 200 grams of Mozzarella cheese
  • 100 ml. of tomato sauce.
  • A small can of anchovy fillets.
  • Extra virgin olive oil
  • A pinch of salt.
  • A pinch of ground black pepper.
  • A few basil leaves.

Elaboration:

We will start by preheating the oven with a temperature of 180º C for about 10 minutes.

Wash the aubergines and cut them in half. With the help of a knife we ​​empty the pulp of the aubergines carefully so as not to break them.

Cut the pulp into pieces and reserve. Open the can of anchovies and drain the oil well.

In a bowl or bowl we put the pulp of the eggplants, the cheese cut into cubes, and the anchovy fillets also cut in half.

Add a little oil, a pinch of salt, a pinch of pepper and stir to mix well.

  • Extra virgin olive oil

Elaboration:

We preheat the oven with a temperature of 180ºC, for 15 minutes. We wash the aubergines well, cut them into slices.

To remove the bitterness we will put salt over them and make them sweat for half an hour. We wash the eggplant wheels with cold water and dry them.

In a frying pan or spit we put an oil fondito and we make them grilled. Once cooked all will be reserved in a tray.

We make a fry with a little oil, the chopped onion, and garlic cloves, for about 5 minutes.

Add the parsley, salt, pepper, tomato sauce to the fry and cook on low heat for 15 minutes.

In a dish or baking tray we put a little bit of olive oil to grease it. Next we put the slices of aubergines and put the sauce on top.

If necessary we will form layers of slices of eggplant and sauce. Mix the breadcrumbs with the grated cheese and spread them over the aubergines. Introduce in the oven and bake for 20 minutes or until golden brown.

Grilled eggplant with honey

Ingredients:

  • 2 ripe small aubergines.
  • Salt
  • A pinch of ground black pepper.
  • Extra virgin olive oil,
  • A trickle of cane honey or honey that you like the most.

Elaboration:

We wash the aubergines well. Cut the aubergines into strips and add fine or coarse salt to remove the bitterness. We keep the aubergine strips with salt for 15 or 20 minutes.

Then wash the eggplant strips with plenty of cold water and leave them in a drainer to drain the water.

Once we have them ready we put a little salt and pepper. In a pan put a little olive oil to warm. Once hot we are grilling the eggplant strips until they are golden brown.
