Ingredients:  

  • 350 grams of pardine, Castilian or Lanzarote type lentils.
  • 2 onions or a small piece of leek.
  • 2 garlic cloves without skin and slices.
  • A piece of pumpkin, about 300 grams, cut into pieces.
  • 2 carrots without skin and cut into pieces.
  • 250 grams of potatoes peeled and cut into pieces.
  • A medium yellow sweet potato peeled and cut into pieces.
  • A chorizo ​​on wheels.
  • A piece of bacon in taquitos.
  • Extra virgin olive oil
  • A teaspoon of ground cumin.
  • Salt.
  • Water.
  • Some strands of saffron.
  • A pinch of turmeric.
  • A teaspoon of sweet pepper.

preparation:  

  1. In a cauldron we put some virgin olive oil to poach the onions with minimum heat.
  2. Once it is begun to pocharse we add the cloves of garlic. When the garlic cloves are golden add the cumin, the sweet paprika and stir to mix well.
  3. Add lentils, chorizo, bacon and cook 5 minutes more with low heat. Next we add the carrots, the pumpkin, the potatoes, the sweet potato, a little salt and we add water until covering.
  4. Cook with moderate heat until it starts to boil.
  5. Once it starts to boil, lower the heat to a minimum and add a few saffron beans, and a little turmeric.
  6. Cook the lentil stew with a minimum of heat until the potatoes and lentils are tender, checking if the salt is good or if you need more water.
  7. Once the potatoes and lentils are tender, turn off the heat. We put the pot of lentils in a tureen or fountain and take it to the table to eat it warm.

The lentil salad can be made with lentils already cooked that we can get in the market or cook ourselves the lentils, everything will depend on the time that we have.

Ingredients:

  • 250 grams of Castilian, Pardina or Lanzarote type lentils.
  • 150 grams of arugula.
  • One onion cut into cubes.
  • A small red pepper cut into cubes.
  • 2 carrots without skin and in pieces.
  • 2 boiled eggs troceaditos.
  • Water.
  • A bay leaf.
  • Extra virgin olive oil
  • Balsamic vinegar.
  • Salt.

Elaboration:

  1. In a pot we put the lentils and carrots to cook and cover them with water.
  2. Add a little salt, a drizzle of olive oil and a bay leaf.
  3. Cook the lentils with moderate heat until they start to boil.
  4. Once it begins to boil, reduce the heat to a minimum and cook until the lentils are tender but firm, we do not let them get destroyed.
  5. When the lentils are in their point, we extinguish the fire and we drain the lentils and the carrot. Let the lentils cool.
  6. When the lentils and carrots are cold we put them in a salad bowl or fountain to make the salad.

  • 3 beaten eggs.
  • 3 sprigs of fresh minced parsley.
  • Extra virgin olive oil
  • A pinch of ground black pepper.

  • Water.
  • A bay leaf.

Elaboration:

  1. If we have bought the lentils already cooked, we open the pot and put them in a drainer to pass them through abundant cold water.
  2. If we are going to cook the lentils we will put the lentils in a cauldron with water that covers them, a little salt and a laurel leaf. Cook with moderate heat until it starts to boil.
  3. When it starts to boil we lower the heat to the minimum and cook the lentils until they are tender.
