Cane honey soups: La Palma recipe for Carnival

Ingredients:

  • 3 hard loaves, (at least 4 days old) cut into slices.
  • Honey of cane, 920 grams.
  • 100 ml. of water.
  • A cinnamon stick
  • A teaspoon of ground cinnamon.
  • One teaspoon of anise grains, (matalahúga).
  • The grated skin of a lemon.
  • 150 grams of toasted or fried almonds.

Elaboration:

  1. We cut the bread into rather thick slices and set it aside.
  2. In a cauldron with wide bottom we put the honey, the water and stir to integrate well.
  3. Add to the honey the lemon zest, the anise grains, the cinnamon stick, the ground cinnamon, half the toasted almonds, stir and cook the honey with moderate heat.
  4. We cook until it starts to boil.
  5. When it starts to boil, reduce the heat, remove the cinnamon stick and put the slices of bread inside the honey one by one so they can bathe in the honey.
  6. We turn the slices on both sides, being careful not to tear them apart.
  7. We are taking out the slices of bread with the help of a slotted spoon so that the honey dries well and placing them on a tray or plate to take them to the table.
  8. We serve the Honey soups with the rest of toasted almonds on top.
