Carnival pancakes with cinnamon syrup: recipe from the Canary Islands

The flour pancakes or Carnival pancakes As they are also known, they are traditional sweets in the pastries of the Canary Islands on the dates in which we are enjoying these holidays.

The tradition of making these pancakes is to taste them on the Tuesday of Carnival, at which time they gather family, friends and snack these rich and warm flour pancakes.

The pancakes can simply be prepared with flour, or adding ingredients such as banana, pumpkin, sweet potato, make them more nutritious and with a very rich flavor.

The pancakes are a sweet that usually everyone in the house likes especially the little ones.

They are easy to make, we can even prepare the pancakes by involving the children of the house and spend a fun and entertaining afternoon with the children.

The pancakes in addition to carrying flour carry other ingredients such as milk, eggs, sugar, the grated skin of a lemon or orange, and to add a touch of flavor, add a little cinnamon, aniseed (matalahúga) or a splash of anise.

We prepare a dough with all these ingredients and then we can fry them or make them in the oven.

When presenting them, we will decorate them with a little icing sugar on top.

Then we can accompany them with a cinnamon syrup above as is the case with this recipe or a splash of honey.

How to make pancakes with cinnamon syrup

As you can see below, the pancakes have simple ingredients that we can easily obtain, most of them we usually have at home.

Ingredients:

  • 400 grams of sifted bakery flour, (yeast flour already incorporated).
  • 500 ml. of whole milk or skimmed milk.
  • 6 eggs
  • 250 grams of sugar.
  • A teaspoon of cinnamon powder.
  • The zest of a lemon or an orange.
  • A teaspoon of anise in grains, (matalahúga).
  • A splash of anise.
  • Soft-flavored olive oil or sunflower oil (for frying).
  • Sugar glas to decorate.
  • Cinnamon syrup to accompany the pancakes.

Ingredients for cinnamon syrup:

  • A branch of cinnamon.
  • 100 grams of sugar.
  • The same amount of water.

Preparation of syrup:

  1. In a small saucepan or heater we put the sugar on the fire to cook with minimum heat.
  2. Add the water, the cinnamon stick and cook with minimum heat without stopping until it starts to boil.
  3. When the syrup is ready, turn off the fire, remove the cinnamon stick.
  4. We reserve the syrup in a small sauce boat or bowl to make the dough of the pancakes.

Preparation of pancakes with cinnamon syrup:

  1. In a bowl we beat the eggs one by one and beat them well.
  2. Once they have gained volume we add the flour little by little, the sugar, the ground cinnamon, the milk, the lemon or orange zest, the grains of anise, the trickle of anise and stir to mix well and form the dough of the Pancakes.
  3. The mass of the pancakes should stay with a somewhat thick consistency, if we stay light we add a little more flour.
  4. In a pan we put plenty of oil to heat.
  5. Once the oil is hot, we fry the pancakes.
  6. With a large spoon we are taking lots of dough and frying them in the oil.
  7. We browned the pancakes on both sides.
  8. We put the pancakes in a tray or plate on napkin or absorbent paper so that it goes draining the surplus oil.
  9. Serve the warm pancakes with icing sugar sprinkled on top.

At the time of tasting them we will put a thread of cinnamon syrup on top.
