Mushroom Soup

Taking advantage of the fact that we are in the autumn (although with one foot already almost in the winter), we know that one of the foods par excellence of the autumn are the exquisite ones mushrooms. Well, here's how to prepare a delicious Mushroom Soup.

First, two handfuls of mushrooms are soaked. When these are soft, they are passed to a saucepan where we will have some onions previously fried in red, and a little oregano and thyme to give them a touch something more special.

They should have enough oil, if possible olive oil. We fry everything well covered over low heat for about ten minutes, adding broth of potatoes in small portions to the amount we finally want.

Of course, we should let it boil until the mushrooms are well cooked, and then throw the pasta.

Cabbage Soup

Especially in a light broth of vegetables with the necessary salt, we cook red cabbage, and when it is half cooked, add grated cheese, in the proportion of two tablespoons per person.

We continue cooking until, finally, the cheese has melted. We add on this occasion a few slices of bread (according to our consideration), and let it boil all for another 10 minutes more.

Rice soup with egg

At first you should wash the rice, drain well, and let it dry. A good option is to prepare sauce with tomato fried in butter, seasoning it with a pinch of cinnamon and cloves, and let it cook for a long time.

In this case we will use the egg yolks, with which we will stir the rice, and put it in a saucepan with a little bit of butter, adding the sauce and, in the middle of the heat, let it boil until the soup thickens a little. ThemesChristmas Christmas Recipes
