Exquisite Christmas Menu with vegetables: recipes for vegans

There are only a few days to celebrate the Christmas Eve Dinner and I am sure many of us will have been caught against the clock. Submerged in the daily life and with the current rhythm of life there are occasions when we have to resort to simple recipes to elaborate and not for that reason less delicious.

The Christmas menu that we present on this occasion is mainly made up of vegetables. It is a complete menu, with starters, first course, second course and dessert.

We like to advise as we always do, that although we provide a series of ingredients, easy to obtain and almost always in season, we can substitute any other ingredient that we have at hand.

Starter (First course): Cream of onions

The onions cream It is a warm dish, ideal to warm up, we know that these days the cold is with us. It is very easy to prepare and very nutritious.

In this recipe we can change if we want the onions for leeks, the cream of leeks is very rich too.

Ingredients:

  • 5 large onions
  • A liter and a half of homemade or industrial vegetable broth.
  • 6 potatoes
  • 2 cloves of garlic
  • 250 ml. of cooking cream.
  • Extra virgin olive oil
  • A pinch of ground black pepper.
  • Salt.
  • For the presentation of the cream: Picatostes, serrano ham chips, or goat cheese in a curl.

Elaboration:

  1. We remove the skin from the onions and break them into squares, large pieces.
  2. We remove the skin from the potatoes, wash them and leave them to paintings too.
  3. In a pot we put a little olive oil to heat to poach the onions.
  4. We also add the chopped garlic and pochamos all together with low fire.
  5. Once everything is well pochadito, add the stock of vegetables, pepper and try salt.
  6. If it is an industrial broth, it may already bring some salt, so it would be convenient to try it first.
  7. Add the potatoes and cook until the potatoes are tender.
  8. Turn off the heat, add the cream, a pinch of ground black pepper and beat well with the blender's arm.
  9. Crush until you get a creamy puree.

Serve the onion cream, with croutons, and chips of serrano ham or a slice of goat cheese.

Second course: Vegetable Pisto

As we said at the beginning of this post, we can change the ingredients.

Ingredients:

  • A bag of vegetable stew.
  • A green pepper
  • 2 red peppers
  • 6 ripe tomatoes
  • A teaspoon of sugar.
  • 2 onions.
  • Extra virgin olive oil
  • A pinch of ground black pepper.
  • Salt.

Preparation of the vegetable ratatouille:

  1. We wash the tomatoes, we remove the skin and the seeds. In a pot we put a little olive oil to heat to make the tomato sauce.
  2. Add the tomato while it is stirring, a little salt, a pinch of pepper, the teaspoon of sugar and stir frequently. Cook the tomatoes until they have the consistency of sauce.
  3. We passed the tomato sauce through a mill and reserved.
  4. Wash the peppers, remove the seeds and chop them into cubes. We remove the skin from the onions and chop them into small pieces.
  5. We heat again some olive oil to poach the onion, cook with low heat for about 15 minutes.
  6. We add the cubes of pepper and cook them together with the poached onion, about 10 minutes.
  7. We add the vegetables, stir well and cook everything for 10 more minutes. Add the tomato sauce, stir well and cook the ratatouille with fire under about 10 minutes.
  8. Remove from the heat the vegetable ratatouille and serve hot.

At the time of presenting it we can accompany it with croutons, slices of tender bread, or with a little rice.

Dessert: Roasted apple puree

The roasted apples They suppose a healthy dessert, it is very rich, it is very simple to prepare and with a sweet touch.

Ingredients:

  • 5 Golden apples
  • 50 grams of brown sugar.
  • 150 grams of crushed cookies.
  • A teaspoon of cinnamon powder.
  • 150 grams of cottage cheese.
  • 100 grams of almonds in sheets.

Elaboration:

  1. We wash the apples, dry them well. We preheat the oven with a temperature of 180ยบ C for 10 minutes.
  2. We put the apples in the oven to cook for about 30 minutes. Before removing them from the oven, we will check if they are tender. Remove the apples from the oven and let them cool.
  3. We remove the skin to the apples and the central area, with a spoon we extract the pulp. With the blender we grind the pulp of the apples until they are pureed.Add to the applesauce the brown sugar, the teaspoon of cinnamon and mix well.

In small bowls or plates we will mount the dessert in this way:

  1. In the background we put some crushed cookies.
  2. Over a teaspoon of cottage cheese.
  3. One or two tablespoons of applesauce.
  4. To finish we put some almonds in sheets.
