Ingredients for cooking aubergines au gratin

  • 3 eggplants
  • 60 g. of onions
  • 5 g. of garlic
  • 50 g of butter
  • Bread crumbs
  • Parsley
  • Mozzarella cheese (to taste)
  • 2 tablespoons of tomato concentrate
  • 1 deciliter of olive oil

Steps to follow to make aubergines au gratin

First we must peel and clean the aubergines, then cut them into slices and salt, let them drain and dry them.

We must in this case sauté them in steaming oil, melting aside about 30 grams of butter, frying them garlic and onions, for about 10 minutes.

We add the concentrated tomato and the chopped parsley at this point, seasoning and sautéing for 5 minutes.

Finally place a layer of eggplant and picadillo in a baking dish, sprinkling with breadcrumbs and pieces of butter.

Then put fresh mozzarella cheese on top (the amount you prefer). The gratin in the oven should last approximately 45 minutes.

  • 7 small eggplants
  • 1/2 kg of tomatoes
  • 1 clove garlic
  • 1 onion
  • 60 g of butter
  • Flour
  • Olive oil
  • Saint

Preparation of the aubergines with tomato sauce:

Wash the aubergines well. Then set them up, cut them into slices and season them with a little salt to taste, leaving them reserved for 30 minutes (in this way we will get rid of their bitter taste).

After this time, drain them and let them dry. Pass each one through flour. Put olive oil in a pan, and when it is hot, fry the aubergines one by one, but without getting too brown.

Put pieces of butter in a baking dish, and place the golden aubergines in the pan. Place in the oven and cook at 180ºC for 10 minutes.

Meanwhile, peel the onion and the clove of garlic and chop them very finely. Peel the tomatoes and cut them into small squares. Cook the tomato, onion and garlic clove over low heat, then add a little salt. Once cooked it goes through the mill.
