Ingredients that you need

  • 500 gr. of patatos
  • 1 onion of small size
  • 40 gr. of chickpea flour
  • 40 gr. of fine corn flour
  • 200 ml. of water
  • Extra virgin olive oil
  • Fine sea salt

Steps to make the omelette without egg

First peel the onion, cut it into julienne and reserve it. Now wash the potatoes and peel, cut into cubes and then add extra virgin olive oil in a pan and that is very hot fry, lowering the fire to make them slowly. In the middle of frying add the onion and let both the potatoes and the onion are done together.

In a bowl mix the chickpea flour with the corn flour. Add salt and then add the water little by little while you do not stop beating, until there is a homogeneous mixture without lumps (its appearance should be similar to that of the beaten eggs).

Remove the potatoes and onions, drain a little and add to the flour shake. Rectify with a little salt.

Now lubricate a non-stick pan a little and return it to the mixture of flours, potatoes and onions. Let it set for 5 minutes and turn it carefully. Cook until the other side sets. Ready! It ends up pouring it on a plate.

If you do not have chickpea flour you can use wheat flour.

If you wish you can accompany a portion of this delicious egg omelette with some slices of tomato and lettuce. An ideal option to turn it into an even more nutritious dish.
