How to make fish with boiled mojo: recipe from the Canary Islands

Fish recipe with boiled mojo

We will ask the fishmonger to clean and scale the fish. This recipe can also be prepared with small fish such as sardines, horse mackerel, anchovies.

Ingredients:

  • A fish of kilo or kilo and half clean.
  • 5 garlic cloves without skin and minced.
  • A teaspoon of sweet pepper.
  • 200 ml. of water.
  • A splash of vinegar.
  • Salt.
  • Extra virgin olive oil, soft.
  • A pinch of oregano.
  • A few cumin grains.
  • 4 slices of fried bread crushed.

Elaboration:

  1. If you have chosen any of these small fish, we only clean it of guts and keep its size, we do not cut it. On the other hand, if it is a large fish, we will cut it into slices.
  2. In a mortar we put the garlic cloves, the ground fried bread, the paprika, the oregano, the cumin and a pinch of salt. We crushed everything well to make the mojo.
  3. Add the trickle of vinegar, and the oil and with the help of a spoon, stir it so that it stays well connected. We put the fish inside a cauldron and on top we add the mojo.
  4. We put the cauldron on the fire and cook the fish with soft fire until it begins to boil, while we stir frequently. When it begins to boil keep boiling with soft fire for 15 minutes. We put out the fire, and serve the fish in individual dishes.

The fish with boiled mojo can be accompanied by some boiled potatoes or some wrinkled potatoes and a salad. In fact, it is especially delicious to accompany it with a few wrinkled potatoes, which as you surely know will be extremely typical of the delicious Canarian gastronomy.
