How to make marzipan: homemade recipe and simple

Christmas marzipan recipe
Ingredients:
- 500 gr. of sugar.
- 500 gr. of ground almonds.
- The grated skin of a lemon.
- Half a teaspoon of cinnamon
- 50 ml. of water.
- An egg (to paint the dough).
Preparation of marzipan:
In saucepan or heater we put water and sugar to cook with high heat, to make the syrup.
Add the teaspoon of cinnamon and the grated skin of the lemon.
We stir frequently until we achieve a clear syrup, that does not darken.
In a bowl we put the ground almonds and add the syrup.
Mix well and let the dough cool.
Once the dough has cooled, we take small pieces of dough and work it spreading it well.
We are making figurines giving it the shape we want.
We put baking paper in the oven tray and put the figurines in the tray.
Once put all the figurines in the tray we will let them rest for 24 hours.
With this rest we will get a crust that will protect so that the marzipan figures do not break while they are baking.
Separate the white from the yolk.
We beat the yolk well and with the help of a brush we paint the figurines.
We preheat the oven to a temperature of 180ºC for about 10 minutes.
After 10 minutes, we introduce the tray in the oven and raise the temperature to 200ºC to bake the marzipan figurines for approximately 3 minutes or until we see them golden brown.
We must be careful as they brown quickly.
