How to make a carrot flan

Ingredients:

  • A kilo of carrots.
  • A leek
  • 5 eggs
  • 50 grams of unsalted butter
  • A little virgin olive oil.
  • A pinch of ground black pepper.
  • Coarse salt.

preparation:

We wash the carrots and remove the skin.

We cut the carrots into pieces and cook them with water to cover them and a little salt.

We cook the carrots until they are tender.

We drain the water from the carrots and reserve them.

Wash the leek and cut into small pieces.

In a frying pan with a little dish of virgin olive oil we are frying the leek and add a pinch of ground black pepper.

Once the leek is cooked, remove it from the heat and add it to the cooked carrots.

We passed the carrots and leeks through the blender.

Beat the eggs well and add them to the mixture of carrots and leeks.

How to prepare a flan of asparagus

The asparagus custard It is very easy to prepare and it is a good idea to present it as a first course or starter. With the quantities that we are going to provide, we will have a flan for 6 or 8 servings.

Ingredients:

  • A can of white asparagus.
  • 100 ml. milk.
  • Of the water of the asparagus, 50 ml.
  • 6 eggs
  • A pinch of ground black pepper.
  • A pinch of salt.
  • A teaspoon of butter to grease the mold.

preparation:

In a bowl we beat the eggs well.

We chop the asparagus and add them to the egg shake.

We also add milk, water, pepper and salt.

We beat again.

In the container or mold where we are going to cook the flan add the butter to spread bottom and walls.

In a pot or cauldron we put a bottom of water to make the flan in a bain-marie.

Place the mold inside, cover the cauldron and let it cook with minimum heat for at least 30 minutes.

Check if the flan is set before removing it from the fire.

We will stick with a stick, skewer or with the tip of the knife to observe if it has already set.

Turn off the heat and let it rest for 10 minutes before unmolding it.

We can eat it warm or cold.

If you prefer cold, we reserve it in the fridge until the moment you serve it.

At the time of serving we can accompany it with mayonnaise, and garnished with a few leaves of lettuce or a mix of salad leaves.
