How to make the Carnival Curd

There is no doubt that the best thing is to know the world, especially if we love the kitchen, and change a bit the recipe book we already have at home. And it is that each place offers us a wide-and delicious-variety of recipes. An example is this recipe that has caught my attention, because it gives me the impression that it can be very rich.

The Carnival Curd It is a traditional sweet of Granada and it is prepared to taste on these dates. It is also possible to see it in the sweetshops of Granada in the month of January after Christmas.

It is a recipe that in Granada they usually make to take advantage of the polvorones, nevaditos or mantecados that have remained for Christmas.

To make the curd we will need besides the Christmas sweets, sweet hair, prepare a syrup and a pastry cream.

How to make the Carnival Curd

Ingredients to make the curd:

  • 300 grams of polvorones, mantecados or nevaditos.
  • 200 grams of sweet hair.
  • Ground cinnamon to decorate.
  • Sugar glas to decorate.
  • Sobaos pasiegos.
  • Syrup.
  • Custard cream.

Ingredients for the pastry cream:

  • 250 ml. milk.
  • The seeds of a vanilla pod.
  • Two egg yolks
  • A spoonful of cornstarch
  • Two spoons of sugar.

Ingredients for the syrup:

  • 100 grams of sugar.
  • Same amount of water.

Creation of the pastry cream:

  1. In a saucepan or warmer put to cook the milk along with the vanilla seeds and we give a boil.
  2. Put the two yolks in a bowl, add sugar, cornstarch and beat well.
  3. Little by little we add the boiled milk without stopping to remove the previous mixture so it does not cut.
  4. We return to the fire and cook without stopping to move until the cream has a thick consistency.
  5. Turn off the heat, pour the cream into a container, cover the container with film and let it cool.

Preparation of syrup:

  1. In a heater we put the sugar and water on the fire to make the syrup.
  2. We stir frequently until it boils and the syrup is at its point.
  3. We turn off the fire and reserve the syrup to moisten the sobaos pasiegos.

Elaboration of the Carnival Curd:

  1. We crush the sweets that have left us, we can do it with a fork or in a chopper.
  2. In the mold or bowl that we are going to present the curd we put in the bottom a layer of the crushed sweets.
  3. On top we put a layer of sweet hair.
  4. On the sweet of hair, a layer of soba sobaos dipped in syrup.
  5. On top of the sobaos we will put a layer of pastry cream.
  6. We repeat the steps and assemble everything the same.
  7. The last layer should be crushed candy.
  8. To finish we cover with sugar luster or glas on top to decorate the curd.
  9. On top of the icing sugar sprinkle a little ground cinnamon.
  10. We put the curd in the fridge for 30 minutes.
  11. We take out the curd and we have it ready to serve.

The Carnival Curd can be enjoyed accompanied by a cup of hot chocolate, a coffee, a tea or an infusion. I hope you are encouraged to prepare it and that you like it.
