Pan de Cádiz: deliciously Christmas recipe

Within the typical Christmas sweets among those who stand out nougat or shortbread, in the South of Spain there is what is known as Pan de Cádiz, a kind of marzipan that is still a clear protagonist of the gaditana gastronomy during the Christmas period.

It is a sweet that is made with an egg dough filled with candied fruit that gives it a sweet flavor of the most characteristic. Although the origin of this sweet is not entirely clear, everything seems to indicate that it became famous from the War Independence, a warlike conflict that took place between Spain and Napoleon's France at the beginning of the 19th century.

By then, the only way that the gaditanos had to feed themselves It was through the huge quantities of almonds that came from the Americas and were stored for long months. When Christmas arrived, they were "forced" to create sweets with them in order to fight the cold and make Easter more enjoyable.

From the decade of the 50s, when this soft nougat full of glazed fruit really began to have a great acceptance among all social classes of that time, until officially received the name of "Pan de Cádiz"

Cadiz bread recipe. Very simple to prepare

Ingredients for the bread of Cádiz:

  • 150 grams of almond flour
  • 200 grams of sugar
  • 50 grams of sugar glass
  • 6 egg yolks
  • Frosty fruit to our liking

Steps to make the bread of Cádiz:

Once we have all these ingredients, we will proceed to make the mass of the marzipan. Although you will see how simple it is to prepare.  

  1. We will start with the almond flour (they sell it in a multitude of supermarkets already prepared) that we will mix with the sugar. Add the three egg whites and stir everything in a large bowl with the help of a wooden spoon. Repeat this process for a couple of minutes until you get a consistent dough.
  2. With the help of a roller, we will make four sheets of one finger thick that we will pile one on top of the other with the help of a transparent film. We pass them to the refrigerator, cover them and let them solidify.
  3. While they are there, we mix three more egg yolks together with the icing sugar. We introduce this mixture in a saucepan over low heat to then stir everything for 15 minutes to get a kind of jam.
  4. We take the sheets out of the fridge to start assembling this bread from Cádiz. We will start with one for the base in which on it we will put some frosty fruit to our liking next to another sheet. With the help of a plate, we "crush" the marzipan so that everything is very compact. Then we put another sheet of marzipan next to the egg candy mixture we made in the third point. We put another layer of candied fruit and cover it with the last sheet.
  5. After this, we will close and knead with our own hands the sheets of marzipan and the candied fruit so that all the ingredients are impregnated with the egg candy. We can also use a pizza cutter to give it a more rectangular shape and get rid of the leftover parts of the marzipan.
  6. We pass it to a tray with baking paper in its base. Activate the oven grill option for less than ten minutes at a temperature of 250º. Although it does not hurt to watch the dough until it is well browned and does not burn. It can be accompanied with a rich sweet wine. And to enjoy!.
