Parfait of figs with hot chocolate sauce

Each year, as autumn approaches, the season of figs, a delicious fruit precisely very characteristic of this time of year, in the same way that it also happens with other foods of natural origin as for example is the case of persimmons, the chestnuts waves mushrooms.

They are natural foods full of benefits and very interesting properties for this beautiful time of year, in which with the change of season and the arrival of cold and bad weather (including the decrease in sunlight so typical of this) our health It suffers, we tend to feel more tired and exhausted, with a greater melancholy and sadness.

Luckily, these foods provide us with the nutrients our body needs to give us the energy and the precise nutrients. This is the case of figs, an energetic food with high content of carbohydrates, sugars and vitamins mainly of the B complex.

Best of all, in addition to consuming them fresh, the figs can also be used to make a wide variety of delicious typical recipes. It is the case of fig bread, a typical dessert from Malaga and the Canary Islands, consisting of a wonderful base of dried figs with which a dense and compact dough is prepared. But we can also find curious and innovative desserts. As is the case with parfait. And what does it consist of? In a ice cream and creamy dessert that comes in the form of a block or thick sheet, made with milk cream or cream and that does not crystallize.

The most traditional recipe is made with figs (you can use both fresh and dried figs), which are accompanied by a delicious hot chocolate sauce on top, which tends to harden a bit when coming into contact with the cold of the dessert. How to make a parfait of figs and hot chocolate sauce

Ingredients for the fig parfait:

  • 150 gr. of fresh figs
  • 500 ml. of whipped cream
  • 4 eggs
  • 100 gr. of sugar

Ingredients for chocolate sauce:

  • 250 gr. of chocolate (fondant)
  • 200 ml. of heavy cream (minimum 18% M.G.)
  • 20 gr. of sugar
  • 125 gr. of water

Preparation of the fig parfait:

First wash the figs well. Now put them in the glass of a blender and crush them well until a paste is formed (without adding water).

Now, in a large bowl, put the eggs together with the sugar and place them until you notice that they have doubled their volume.

With care so that the cream does not come down, mix the eggs with the fig paste. Now add the whipped cream little by little.

Put it in individual molds or in a single large one, and take it to the freezer so that it goes taking body. After one hour has passed remove from the freezer and stir to break the crystals. Then freeze again.

Preparation of the chocolate sauce and serve:

At the time of serving the parfait is the excellent opportunity to prepare the hot chocolate sauce. It is very simple.

First chop the chocolate into several small pieces. Reservation.

In a saucepan heat the cream together with the sugar and water. Mix well and continuously with the help of rods, so that the sugar dissolves well. Just when it starts to boil, remove the saucepan from the heat and add the chopped chocolate, little by little and carefully.

Mix the chocolate with a spatula until it is completely melted. You will see how the chocolate sauce has become thin and shiny.
