Recipe for almond cordials and angel hair: Christmas candy

The Cordials They are traditional sweets from the region of Murcia, and the entire Levantine area. They are prepared to taste them in these Christmas dates, and they are made with a dough that takes almonds, angel hair, sugar, egg, and lemon zest, is shaped into a ball, and each cordial is placed on a wafer. cookie, then cooked in the oven.

The cordials are sweet ideal for tasting both dessert and snacks, also to present them together with the traditional Christmas candy store.

How to make cordials of almond and angel hair

Ingredients:

  • 250 grams of almond flour, or ground almonds.
  • 200 grams of sugar.
  • 200 grams of angel hair.
  • A pack of wafers.
  • 2 large eggs
  • The grated skin of a lemon.
  • Sugar icing to decorate, (optional).

Elaboration:

  1. In a bowl we put the almond flour, the sugar, and the grated skin of the lemon. We mix everything well. We add the eggs one by one, each time we add an egg, mix well with the dough and then add the next one.
  2. We add the angel hair and mix again. We are preheating the oven with a temperature of 180º C, for about 15 minutes and with heat up and down. While we are forming the balls with the dough to go forming the cordials.
  3. We will take a bit of dough with a soup spoon or for dessert it will depend on the size we want to give to the cordial ones and we give the cordials a ball shape.
  4. We can do the cordials forming a peak in the top of the ball as if they were coquitos or almond. We reserve the cordial ones already formed.
  5. On the baking tray we put baking paper to cook cordials. On the paper of the oven we place the squares of the wafers or circles of wafers, which we have achieved a bit separated from each other.
  6. We place a cordial sweet on each wafer. We introduce the tray in the oven at half height and cook cordials at 180 º C for 20 or 30 minutes or until we see that they are brown.
  7. Carefully remove the tray from the oven and let the cordials cool on the oven rack. We cook all the cordials until we finish with the dough.
  8. Once the cordials are cold we sprinkle them with a little icing sugar, it will give a more Christmas touch to the presentation.
  9. At the time of the presentation we put the cordials on a tray or a nice plate.

As we have said before, these sweets are ideal for tasting them both as a dessert or as a snack accompanied by a cup of coffee, a hot chocolate or an infusion.
