Recipe for chicken stuffed shell soup

The pasta that is used to make this soup is a shell-shaped paste. A shell that as you can see in the photos are large enough to be filled. The pasta is also known by the name of "Lumaconi", and how "Galets"in Catalonia.

As we have said before it is a large shell that we can also find in different sizes or numbers, the bigger the better to fill them. It is a soup that is very rich, that we can prepare at any time of the year, it is also ideal to prepare it during the Christmas days.

Recipe for chicken stuffed shell soup

Ingredients to make the broth:

  • Half chicken.
  • Two carrots.
  • Two onions.
  • A branch of celery.
  • Four cloves of garlic without skin
  • Water.
  • Salt.
  • A few grains of black pepper.
  • Extra virgin olive oil

Preparation of the broth:

  1. We remove the skin from the chicken and wash it. We remove the skin from the carrots, we cut them in four and wash them. Peel the onions and cut them into quarters.
  2. We wash the branch of celery. In a cauldron we put all the previous ingredients covered with water.
  3. Add the garlic cloves, some black pepper granites, a splash of extra virgin olive oil, a pinch of salt, and cook the broth with moderate heat until it starts to boil.
  4. When it boils, reduce the heat to a minimum and cook for an hour.
  5. We extinguish the fire, we strain the broth, and we reserve it to make the soup, we remove the vegetables and we let the chicken cool down.
  6. Crumble the chicken to make the pasta filling.

Ingredients to fill the pasta:

  • 250 gr. of lumaconi pasta.
  • The ground chicken meat.
  • The crumb of a bread.
  • Half a glass of milk
  • A beaten egg.
  • Two garlic cloves without skin and small pieces.
  • A sprig of minced parsley.
  • A pinch of ground black pepper.
  • Some flour.

Preparation of the filling:

  1. We put the chicken in the crusher until grinding it well, and we reserve it.
  2. We put the garlic cloves, the minced parsley, in a mortar, crush well and add ground chicken and mix well.
  3. In a bowl we put the milk and the bread crumb to soften it.
  4. When the crumb is already soft we add the ground chicken meat, a pinch of salt, a pinch of pepper, the beaten egg and mix.
  5. We mix to integrate well and make a dough.
  6. Once the dough is made, we take small portions with the help of a spoon and carefully fill the pasta.
  7. When we have all the stuffed pasta, we go through a little flour.

Preparation of the soup:

  1. The cast broth that we had reserved we put it in a cauldron to the fire to heat. When it is already hot add the stuffed pasta.
  2. We cook the soup with medium heat for about half an hour, until the pasta is cooked.
  3. Once cooked the pasta extinguish the fire. We serve soup carefully and over the soup the stuffed shells.
