Recipe of baked potatoes, Hasselback style (accordion potatoes)

With the name of Hasselback potatoes we are faced with a really curious way of cooking potatoes, besides giving an attractive touch to potatoes by the shape they have, makes them cook better and are more tasty or tasty. The shape of the potatoes is curious, since it reminds us of an accordion, this form is obtained by making several cuts in the form of sheets to the potatoes.

With this form, in addition to the fact that potatoes are cooked well in the oven, they are also better impregnated with the flavor of the ingredients with which we want to prepare them.

Maybe you ask how I did at the time, where does the name come from? Hasselback?, according to the data found and quite old, the name refers to a Swedish restaurant that was called that way and cooked potatoes with this shape.

Normally the potatoes are usually filled between sheet and plate and then seasoned with the seasonings that we choose or that we like the most, the same happens with the filling.

The type of potato that is usually used for this recipe are floury potatoes of the variety Spunta, or Kennebec, and in terms of size, it is better to choose medium-sized potatoes.

Hasselback-style potato recipe

Ingredients:

  • 5 medium potatoes (Spunta or Kennebec) or one potato for each diner.
  • For the dressing: a clove of garlic, a little fresh thyme, oregano, a pinch of salt, a pinch of ground black pepper, a drizzle of extra virgin olive oil.
  • For the filling: a goat cheese curl cut into thin rolls.
  • Butter.

Elaboration:

  1. We wash the potatoes well with plenty of water and we make sure there is no trace of dirt, we can help ourselves with a brush. Once clean, dry them well or with a cloth or paper napkins.
  2. We cut the potatoes 3 or 4 millimeters thick and careful not to reach the base so that the potatoes do not break.
  3. To make these cuts we can put a large spoon the size of the potato to prevent the knife from reaching the base.
  4. It can also help us to cross the base along with a skewer, this will also make a stop so as not to reach the base with the knife.
  5. To make the dressing, we remove the skin from the garlic clove and chop it lightly. In a mortar we put the chopped garlic clove and spices and crush well. Add a little salt and a drizzle of olive oil, just to make the dressing unctuous.
  6. Between each hole of the potato we put a goat cheese wheel alternately.
  7. We will also alternate the seasoning we have prepared. Then over the potato we put a teaspoon of butter, and if we want something of the dressing.
  8. We do the same with all the potatoes. We have the potatoes in a tray or source. We put the oven to preheat with a temperature of 200º C, for 10 minutes, and with heat up and down.
  9. Once the oven is preheated, cook the potatoes by placing the tray at a medium height, with heat up and down for 35 or 40 minutes, and with a temperature of 160ºC.
  10. We must control while they cook that they do not burn on top. They should be golden brown, crispy on the outside and tender on the inside.
  11. Once the potatoes are ready, we carefully extract the source from the oven.
