1. Heat three to four tablespoons of milk. Dissolve the leaven in it.

3. Now, in a large bowl, add the rest of the flour, making a little hole in the center, to put the eggs, sugar and lemon zest. Beat everything very well.

4. Add the butter so that it integrates well into the dough. Keep kneading well.

5. Now you must join the two masses, letting it rest then another two hours.

6. During the time that we have let the dough rest, it must have remained spongy.

7. Turn the oven to a temperature of 160º and take the oven source where you are going to make the roscón.

8. Place baking paper and spread a little butter on it to prevent the dough from sticking.

9. Pour the dough and give it a screw shape. In case you are going to put a small gift inside the roscón, now is the time to introduce it well into it.

10. Now add the candied fruit to taste, paint it with beaten egg and sprinkle sugar.
