Ingredients:

  • 1 kg. of squid
  • 1 1/2 kg can of crushed tomatoes
  • 4 cloves of garlic
  • 1 onion
  • 1 red pepper
  • 150 ml. of cognac
  • 150 ml. of white wine
  • 1 tip of chilli pepper
  • Extra virgin olive oil
  • Salt

How are squids made in sauce?

  1. First of all let's start preparing the squid. For this, we proceed to clean and cut them. Then we place them in a colander and let them drain very well. Cut them into slices.
  2. Peel the onion, cut it into pieces and then rub it very well. Do the same with garlic.
  3. Then wash the red pepper well and cut it into small squares. Place the onion, garlic and red pepper in a pan with oil and put them to pojar.
  4. Once poached add the squid, pour the cognac over it, then do the same with the wine, and let the alcohol of both drinks evaporate.
  5. Add the crushed tomato sauce, the chilli tip and the salt.
  6. Lower the heat (soft fire), and cook for 20 to 25 minutes, until the squids are tender. It is ideal that the sauce has thickened and reduced.
