Vegan marzipan Christmas recipe

We are faced with a typical Christmas sweet very characteristic of these popular festivals, highlighting especially its importance in Spain, where apparently it is original.

In fact, according to evidence, it seems that the marzipan was originally introduced in Europe through the Muslim invasion that suffered the Iberian Peninsula in the eighth century. Although some historians believe that it could also have been introduced through crusaders and pilgrims.

However, many believe that the marzipan may have been originally invented in the convent of San Clemente de Toledo back in 1212, after the battle of Las Navas de Tolosa.

Although it is a typical sweet whose basic ingredients are ground almonds and sugar, it is also made with other ingredients, such as for example the egg. This can be a problem for people who are allergic to eggs, or who are simply vegan and do not want to eat foods of animal origin or provenance.

For these cases we propose a delicious option to prepare vegan marzipan, ideal so that at Christmas you do not stay without trying this typical Christmas treat, if in addition to liking the sweet you are vegan. Do you dare to prepare it with us ?.

Recipe of vegan marzipan

Ingredients:

  • 250 gr of raw almonds (peeled and ground)
  • 120 gr of icing sugar
  • 1 lemon
  • 40 ml of water

How to make vegan marzipan:

  1. Put the 40 ml of water and the icing sugar in a saucepan, and slowly let the sugar dissolve little by little until a syrup forms.
  2. Meanwhile, squeeze a lemon to obtain its juice and carefully grate its shell. Reserve them.
  3. Once the syrup is formed, remove the saucepan from the heat and add the ground almonds (remember that it is very important that the almonds are peeled and raw).
  4. Add a teaspoon of lemon zest and a tablespoon of previously strained lemon juice.
  5. Mix everything very well until a homogeneous mass is formed. Then let it cool for a few hours.
  6. Now is the time to shape the marzipan. To do this, helping you with a spoon, take small portions of marzipan and then mold with your hands, giving the figurines the shapes that you like the most.
  7. Cover a baking tray with parchment paper (ideal for baking), and place the marzipan figs carefully.
  8. Put a little water in a glass and some sugar, and with the help of a brush varnish the marzipan figures a little above. Thus they will acquire their particular -and wonderful- tan color.
  9. Bake at 180ºC for 8 minutes.
  10. After this time remove the oven and let it cool a bit.
  11. Ready! To enjoy them.
