There is no doubt that if we think of desserts or typical sweets that are very characteristic of Christmas, polvorones they become one of the most popular. As with the marzipan, that delicious sweet made from ground almonds and sugar, whose figurines they like so much during this wonderful time of year.

It is a typical product of the Christmas pastry, which stands out above all for being tremendously popular in Spain, being well known those that are made every year in Andalusia (in Estepa and Fondón), in Castilla y León (Tordesillas) and in Navarra (Pitillas).

As you surely know, The polvorón is a kind of cake of small size, made with flour, butter and sugar, which is baked in the oven usually at a high temperature, and which has the particularity of getting rid of dust when we bite it.

However, although it is traditionally made with lard, this ingredient prevents a person who is vegan or who simply does not consume foods of animal origin from eating it during Christmas.

Vegan recipe of Christmas polvorones

Ingredients:

  • 550 gr of toasted flour
  • 250 gr of sugar
  • 75 gr of white wine
  • 70 gr dry brandy
  • 200 gr of extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1 lemon
  • 60 gr of orange juice
  • 2 teaspoons of lemon essence
  • Powdered sugar

How to make vegan polvorones:

  1. Toast the flour in a pan:First let's toast the flour. To do this you just have to put it in a pan and let it heat for a few minutes, stirring it with the help of a wooden spoon. Until you notice that it has completely toasted. Then let it cool, and then store it in a glass jar.
  2. Toast the flour in the oven:You can also choose to toast the flour in the oven. To do this you just have to put the flour on a baking tray and spread it well. Insert the tray in the oven and heat to 150ºC of temperature. Remove it from time to time, this way you will lose moisture. When you take the color out of the oven, let cool and once cold goes through a sieve.
  3. Get the crust of a lemon and put it in a pan on the fire with the olive oil. Toast the oil a little but without letting the crust burn.
  4. In a large bowl put the sugar, orange juice, lemon essence, white wine, brandy, fried olive oil and ground cinnamon. Mix everything well with the help of rods.
  5. Now pour the toasted flour and knead with your hands. You will get a more or less greasy cream. Let it sit for 1 or 2 hours.
  6. Then take pieces of dough and flatten them with your hands. Finally give them the shape of round and thick cakes (you can use a short pasta if you prefer).
  7. Place the dough cut on the baking tray, place the tray at second height and bake with the grill activated at 200ºC temperature for 15 to 20 minutes.
  8. When ready, remove from the oven and let cool.
  9. Once cold add a lot of icing sugar on top.
