Basque cake recipe, discover how to do it

The traditional Basque cake It is an exquisite cake with which you can surprise your family and friends, it is an ideal cake to taste both in dessert and snacks.

It is a cake of French Basque origin, specifically from the area of ​​Cambo (Labourd) and the historical data that there is about this cake give it an antiquity dating from the seventeenth century.

The first Basque cakes were made with corn flour and were not filled, they began to be filled with cream at the end of the 19th century.

The Basque cake is prepared by preparing a broken dough or pasta and then inside it is filled with pastry cream or stuffed with jam from different fruits such as raspberries, blueberries, cherries, blackberries.

The pastry cream is usually flavored with cinnamon or vanilla flavors, also with spirits.

The recipe we present for Basque cake is to make a cake filled with homemade raspberry jam.

We can also use any marmalade already industrially made of raspberries, cherries, blueberries, if we do not have much time.

How to prepare a Basque cake

As we said before is a delicious cake and very easy to make, it has been very delicious. Do you dare to prepare it?

We will need a few ingredients, a circular mold of 20 or 22 centimeters and that can be dismantled and follow these simple steps.

Ingredients for the broken pasta:

  • 380 grams of simple sifted wheat flour.
  • 6 grams of yeast.
  • 200 grams of butter softened and squared.
  • 2 eggs
  • An egg yolk to brush the cake.
  • 180 grams of white sugar
  • A tablespoon of rum or any other liquor.
  • A little butter and flour to grease the mold.

Ingredients for the filling, a raspberry jam:

  • 300 raspberries
  • 200 grams of sugar.
  • 7 grams of pectin.

Preparation of the pasta:

We pass some butter and flour through the bottom and walls of the mold and reserve to prepare the dough.

On the table or countertop previously floured we put the flour as if it were a volcano, we make a hollow inside it and we put the beaten eggs, the softened butter, the sugar and the rum.

We began to work the dough mixing all the ingredients well.

Knead until the dough is firm and does not stick from your hands.

Once we have the dough made, we form a ball with it and cover it with film and let it rest in a warm place for one hour.

While we are making the raspberry jam.

Elaboration of the raspberry jam:

In a saucepan put the raspberries and add a tablespoon of water on top.

We put the bucket with the raspberries to the fire, we cook with low fire and when it boils we keep cooking during 5 minutes with low fire.

After 5 minutes add 150 grams of sugar and stir, boil for 3 minutes.

The other 50 grams of sugar we mix with pectin.

Once boiled for 3 minutes add the pectin mixture and boil again for 2 minutes and without stopping to stir.

We remove the jam from the fire, and let it cool.

While we are making the cake dough.

Preparation of the Basque cake:

We put the oven to preheat with a temperature of 220ºC for 10 or 15 minutes.

After the resting time of the dough, we divide the dough ball into two parts.

Flour the countertop or the table and with the help of a rolling pin we extend the two balls of dough.

We will form two circles with the mass somewhat larger than the bottom of the circular mold.

We put one of the circles of dough in the bottom of the mold, extending and covering well the bottom and edges.

We puncture the dough with a fork in several areas.

Then with a spoon spread the jam over the dough, and cover with the second circle of dough closing the cake well by the edges. It should stay well closed.

If we want to decorate the surface of the cake we can take advantage and with the help of a fork make some drawings or decorative motifs.

Beat the yolk well and brush with a cake over the top.

We introduce the cake in the oven and cook for 30 minutes with a temperature of 220ºC. After the time we extract the pie from the oven and let it cool before unmolding it.

Once cold and we can unmold and chop it, ready to taste as a dessert or afternoon tea with a cup of coffee, a tea, or a cup of hot chocolate.
