How to prepare purifying soups and broths, healthy and at the same time appetizing

After the Christmas excesses it is good to use both the broths and the soups to purify or detoxify our organism. Surely if we have exceeded eating that is usually the usual we are like swollen, with a sense of heaviness, tired and probably begins to poke the bad mood.

In addition to the soups and broths that we are going to facilitate, we can also make juices of vegetables, vegetables or fruits that, due to their properties, can also help us to purify our organism.

All these recipes are very easy to prepare and in a short time you have a rich broth or soup that you can include at lunch or dinner.

Vegetable soup with grated Parmesan cheese

Ingredients:

  • Water for cooking.
  • 2 courgettes
  • A sprig of celery.
  • 50 gr. of potatoes.
  • Half leek
  • 100 ml. of skimmed milk.
  • A spoonful of grated Parmesan cheese.
  • A pinch of ground black pepper.
  • A pinch of coarse salt.

Elaboration:

We wash the vegetables well.

Cut the courgettes into slices, and the leeks.

We remove the skin from the potatoes, wash them and cut into quarters.

We put the vegetables and the potatoes in a cauldron to cook with water that only covers them.

Cook with soft fire until tender, about 30 minutes.

When they are cooked add the milk, a pinch of salt and pepper, stir and remove from heat.

We beat everything with the blender.

When serving it, sprinkle with the grated cheese.

Cucumber and yogurt soup

Ingredients:

  • 3 small cucumbers, or pickles.
  • A skimmed cheese
  • 3 skimmed yogurts.
  • 250 ml. of water.
  • A few sprigs of fresh or dried dill.
  • Virgin olive oil mild flavor.
  • A pinch of coarse salt.

Elaboration:

We remove the skin from the cucumbers, wash them and cut them into cubes.

We open the yoghurts and put them in a bowl or bowl.

We wash the dill and chop it in a small way.

Add the dill to the yogurt and stir to mix.

Dilute the yogurt with water and add the cucumbers, the cheese cut into squares, a pinch of salt and a drizzle of olive oil.

We stir to mix well and serve.

Cream of leeks

Ingredients:

  • 6 leeks
  • 750 ml. of chicken broth.
  • 50 ml. of skimmed evaporated milk.
  • Water to cook the leeks.
  • Extra virgin olive oil.
  • A pinch of ground black pepper.
  • A few leaves of parsley.
  • A pinch of salt.

Elaboration:

We wash the leeks well and cut the green parts.

We chop the leeks.

Wash the parsley and chop the leaves.

In a little water we put the leeks to cook for about 20 minutes.

Drain the leeks and add milk, broth, pepper, a little oil, a pinch of salt and stir everything together.

We put to cook with soft fire during 10 minutes.

After the time we crush with the blender.

When serving it, we will accompany it with minced parsley on top.
