Ingredients you need:

  • 1 kilo and quarter chicken.
  • 2 onions "chalotte" type.
  • 50 gr. of butter.
  • 2 tablespoons of lemon juice.
  • The juice of half an orange.
  • 1 glass of white wine
  • 1/2 glass of rum

Preparation of the baked chicken:

First you must split the chicken in two halves. Carefully clean it and empty it and place it in a baking dish or tray. Preheat the oven for 10 minutes.

Melt the butter, wash the lemon and orange and squeeze them to obtain their juice. Then, in a large bowl, mix the butter, the lemon and orange juices in the indicated amounts, the white wine and the rum. Peel the onions and chop them very finely, adding them to this mixture.

Add salt to the chicken and pour over the butter preparation, citrus juices, white wine, rum and onions.

Place in the oven in a refractory dish and cook for about three quarters of an hour. When this time passes turn the two halves and spray it with your own juice. Return to the oven until you see it well browned.
