Delicious recipes with gomasio or gomashio

Although there are very common and known condiments that, in a common way, we tend to use every day in our kitchen (as it could be the case of rosemary, cardamom, curcuma, curry or black pepper), the truth is that we can also mention others less popular but equally delicious.

One of them is the gomasio, a very traditional condiment in some Asian countries, and which actually comes directly from Japanese cuisine, where it is traditionally made with the suribachi, the classic Japanese mortar.

It is also known by the name of gomashio, and although it is an essential ingredient in the innovative macrobiotic diets for the different benefits it offers, the truth is that in Japan it is a widely used condiment.

Basically the gomasio consists of sesame salt. It becomes, in fact, in a healthier natural option as a substitute or alternative to common salt, because it has a special feature of providing flavor to food, but with a low sodium content.

How to make gomasio quickly?

Although on a previous occasion we already explained how to make gomasio at home easily in the traditional way with the suribachi, and using a typical mortar like the one we can all have at the moment in our kitchen, we want to explain briefly how you can make gomasio before making any recipe with gomasio of which we will propose to you throughout the present note.

For your preparation you only need 8 teaspoons of raw sesame seeds and 1 teaspoon of unrefined sea salt. Toast the sesame seeds in a skillet lightly, without adding oil. Then add them to the mortar and tap lightly to open the seeds, but without crushing them completely.

Re-add the crushed sesame seeds to the pan to heat them over low heat, add the sea salt, mix a little and that's it! You only have to reserve it in a sealed glass container once it has cooled down.

Lentil salad with gomasio

The lentil salad that we propose below is very easy to make. In addition, it has the particularity that you can consume it either hot or cold, as you like it. Take note. And if you want you can add a few leaves of basil or arugula on top.

Ingredients:

  • 400 g of cooked lentils
  • 2 carrots
  • 1 tomato
  • 1 onion
  • 1 lemon
  • Apple vinager
  • Dijon mustard
  • Extra virgin olive oil
  • Ground black pepper
  • Gomasio

Preparation of lentil salad with gomasio:

Drain the cooked lentils and dry them well. Reserve them. Then wash the carrots and peel them. Put water with a little salt in a casserole dish and cook until tender. Then strain them and reserve. When they are cold, cut them into small squares.

Wash the tomato thoroughly and cut it into small cubes. Peel and chop the onion into small pieces.

Mix all the ingredients in a large bowl, along with the lentils. Squeeze the lemon to get its juice and add it too, mixing a little.

Now we are going to prepare a vinaigrette with the mustard of Dijon, which will serve us to season the salad. In a bowl add the olive oil, vinegar, mustard and black pepper. Beat with the help of rods until the liquid emulsifies.

To finish, water the salad with this delicious dressing and add gomasio on top. Ready!. You can enjoy it now

Rice salad and gomasio

If you liked the lentil salad that we have proposed in the previous lines, it is also possible that you like the rice salad that we will talk about now. Do you dare to prepare it ?.

Ingredients:

  • 300 g of basmati rice + Half a liter of water + 2 tablespoons of olive oil
  • 1 slice of smoked salmon
  • Chives
  • 2 tomatoes
  • 1 can of roasted pepper
  • Capers
  • Provencal spices (mixture of aromatic spices)
  • Soy sauce
  • Extra virgin olive oil
  • Gomasio

Preparation of rice salad and gomasio:

First let's proceed to cook the rice. For this we put the basmati rice in a fine mesh sieve and place it under the cold water jet, rinsing well for at least a minute. Then drain the rice well to release all the water.

Put 2 tablespoons of olive oil in a saucepan or casserole and heat over medium heat. When the oil is hot add the rice, mix well and leave on the fire for 40 seconds stirring constantly. Then add half a liter of water, raise the heat to the maximum and when it begins to boil add half a tablespoon of gomasio. Cover the pan, lower the heat to the minimum and let the rice cook for 15 minutes with the casserole covered. Then we will have the rice ready.

Now let's continue with the preparation of the salad. Cut the scallions, roasted peppers, tomatoes and smoked salmon into small pieces.Mix in a bowl and season to taste with a little soy sauce and a little olive oil.
