Homemade cronums: recipe step by step

They run sweet and almost magical times for many New Yorkers, who do not mind doing endless queues to get one of the desserts that, it seems, could become a direct competitor of the current cupcakes: cronut.

Explained in an easy and simple way, we can say that we have a combination between the croissant and the donut, but obviously it is neither a croissant nor a donut.

Its texture does very much resemble that of a croissant, precisely because the steps to make it at the beginning are practically the same; but then remember in appearance to a donut, because it is bathed in sugar and given its traditional and popular form.

Considering that we are faced with a combination of croissant and donut, it is possible to make a delicious cronut home easily at home combining both recipes. You dare?

Ingredients for the mass of cronut

  • 500 gr of strength flour
  • 50 gr of butter
  • 75 gr of sugar
  • 2 eggs
  • 25 gr of yeast (bakery)
  • 75 ml of water
  • 75 ml of whole milk
  • 200 gr of butter

Ingredients for the cream

  • 500 gr of milk
  • 100 gr of sugar
  • 3 egg yolks
  • 40 gr of flour
  • 25 gr cornstarch
  • 2 tablespoons of vanilla cream (optional)
  • 1 cinnamon stick

Ingredients for sugar glaze

  • 100 gr of sugar glass
  • Half lemon juice
  • A few drops of water

Ingredients for pink icing

  • 100 gr of sugar glass
  • Half lemon juice
  • A few drops of pink dye
  • A few drops of water

Preparation of puff pastry with yeast

Sift the flour and form two volcanoes, one of them only with a quarter of the flour. This fourth part mixes it with the yeast and with warm water, forming a ball that will ferment in a bowl with water (until it forms a sponge).

In the largest volcano add the rest of the ingredients, except the 200 grams of butter. Once all mixed, add the sponge and knead well for 10 minutes, until obtaining an elastic mass but slightly moist.

Make two cross cuts on it and let it rest for 10 minutes.

Now add the 200 grams of soft butter. Close the dough as if it were an envelope, and with the help of a rolling pin it crushes the dough, stretching it and leaving it three times longer than it is wide.

Fold the dough over itself and stretch again.

Preparation of the cream

Heat the milk with the cinnamon stick in a saucepan, but do not let it boil.

In a bowl mix the sifted flour together with the cornstarch and sugar. Add the yolks, half a glass of milk and beat well with the help of rods.

Remove the cinnamon from the milk and add it to the previous mixture. At low heat bring to a boil while stirring with the help of a wooden spoon. When it thickens a bit it will be ready.

Remove from heat and let cool to room temperature.

Preparation of sugar and pink icing

In a saucepan or bowl mix the icing sugar with the juice of half a lemon and a few drops of water.

To prepare the pink frosting, follow the same steps above, but add a few drops of pink food coloring.

Preparing the mass of homemade cronut

Cut the dough in circles with the help of a glass or a lid (one large and one smaller). Put them on top of a baking sheet, which you have covered with baking paper. Let stand about 20 minutes.

In a pan with plenty of oil, fry the cronut on one side and on the other, until golden brown.

Now, with the help of a kitchen syringe, stuff the cronuts a little with the vanilla custard, and finally finish them in the sugar glaze. Let the icing cool.

Finally, add the pink frosting.

It is a special croissant dough, which was first fermented and finally fried. Then it is overflowing with sugar, filled with vanilla ganache from Tahiti and finally finished with a glaze of roses and petals of this crystallized flower.

The result is more than evident: a magical sweet that remembers in texture the croissant, but that apparently is quite similar in shape to the popular donuts.

At the moment they are causing a furor in New York.And if we take into account that the fashion of cupcakes is also born in the Big Apple to finally spread all over the world, it is foreseeable that they will reach us sooner rather than later.
